A Mexican baked specialty: Tortillas

A tortilla is a flatbread very popular in Mexico and prepared in a great variety of ways. In contrast to the Spanish tortilla of the same name, the Mexican tortilla is made from corn (maize).

The Spanish tortilla is an egg dish (omelet). During a deployment for the Senior Experts Service in Mexico, I had an opportunity to visit a tortilleria in a small village where this specialty is produced and sold.
